Japanese Restaurant Style Ginger Salad Dressing

Ingredients

1.5 cups carrots

peeled and chopped

2 medium celery stalks

chopped

0.25 whole yellow onion

chopped

2 tablespoons fresh ginger

peeled and chopped

0.50 cup avocado oil

+ 2 additional tbsp

0.25 cup coconut aminos
3 tablespoons rice wine vinegar

(sub apple cider vinegar for AIP)

2 teaspoons coconut sugar

(omit for whole30)

0.75 teaspoon sea salt
0.25 teaspoon ground pepper

(omit for AIP)

Instructions

Add all of the ingredients to a high-speed blender and blend until fully incorporated. The dressing should be thick and fully combined.

Season further to taste as desired.

Store in the fridge and serve over a salad of romaine or iceberg lettuce, shredded carrots, and more ingredients as desired.
