High-Protein Lemon Blueberry Overnight Oats

Ingredients

1 cup gluten-free rolled oats
3 tablespoons chia seeds or hemp seeds
1 cup non-dairy milk
1 teaspoon vanilla extract
1 teaspoon lemon zest

the amount of zest from one small lemon

1 small lemon

juiced

4 tablespoons coconut yogurt

(or your go-to yogurt)

1 drizzle maple syrup

to taste

1 scoop vanilla protein powder

(optional)

0.50 cup blueberry jam

for layering

1 bunch extra blueberries

for layering

Instructions

In a medium bowl, add the oats, seeds, milk, lemon zest, lemon juice, vanilla extract, yogurt, maple syrup and protein powder (if using) together to combine

Cover the bowl then add to fridge for at least 2 hours or overnight

When ready to serve, layer with jam and blueberries and enjoy! I like to use these jars
